I so want to have a gracious table. "Characterized by kindness and warm courtesy." It's a dream of mine.
Growing up, our table was far from gracious. It wasn't rude or anything, but it definitely wasn't warm.
As soon as we were old enough to reach the stove, we were on our own. We were like the first family EVER
to get a microwave. Needless to say, my mother did not cook. So I didn't learn, until I discovered the
joy of cooking for myself, as an adult. Call me crazy, but really is a joy. (Then again, if you're here at my recipe blog,
you probably won't call me crazy.)

Hey Julies....
Or Rebecca...anyone have a good tried-and-true chicken enchilada recipe? Real rolled enchiladas, not the layered tortillas and stuff. I had one that was quite good but I seem to have misplaced it. TIA...
I DO have a good one but am writing this from an antiquated computer on dial-up (what agony! brother do I appreciate my computer and DSL). I'll send it when I get home from Houston.

Ok, I thought I had one but can't find it anywhere or remember which cookbook ... so maybe I didn't have one. SORRY! I'd try All-Recipes.
